We toast sunflower seeds, superfood linseeds & sesame seeds to create an incredibly nutty-tasting loaf, using a nurtured Rex sourdough culture captured from nature by mixing flour, water & some local honey together some 2+ years ago.  Hugely popular loaf since launch and awarded Silver Medal in the World Bread Awards 2014.

Product Description

First launched at Village Day 2013 & a sell out on the pop-up bake list since then, 3 Seed Levain is a specialty Rex Sourdough made from time to time.  The Rex Baker developed his bubbling fermenting natural culture for the sourdoughs by throwing away half of the mixture and adding more water & flour each day.  The dough for each loaf then has 3 days’ retarding & proving to achieve the signature hole-y structure.This is how our ancestors made bread.  Read more about Sourdough here
