First launched at Village Day 2013 & a sell out on the pop-up bake list since then, 3 Seed Levain is a specialty Rex Sourdough made from time to time. The Rex Baker developed his bubbling fermenting natural culture for the sourdoughs by throwing away half of the mixture and adding more water & flour each day. The dough for each loaf then has 3 days’ retarding & proving to achieve the signature hole-y structure.This is how our ancestors made bread. Read more about Sourdough here
