100% wholemeal bread made from Organic Wholemeal Flour and mixed long and slow for best possible taste and structure.  We start the fermentation process the day before with about 20% of the dough which helps produce a more complex flavour  . As we do not add 'improvers' or other chemicals to try and preserve or enhance the volume of the loaf, we have to find other ways of naturally doing this and here we use what is known as a 'flying sponge' which is a very wet mix of flour, water & yeast.

Many friends of Rex had asked for 100% wholemeal loaf – perhaps for a special diet, perhaps for taste preference.  Rex Wholemeal loaf is topped with extra wheat bran and contains no fat or dairy whatsoever so requires careful mixing for the right texture & taste.  All sandwich tin loaves are not the same – ours take at least 24 hours to make.  Learn more here

    I bought a small loaf with a big taste, and two small slices are far more filling than any prepackaged sliced wholemeal loaf!
    My 9 year old son’s statement summed it up – “Mmmmmm, yum! Is this what real bread tastes like?”

    I stopped eating wholemeal bread as I struggled to find one without being full with preservatives. That was until I came across Rex Bakery and their wholemeal bread. Not only does it not contain any unnecessary ingredients or preservatives but it also tastes absolutely amazing!
